If you have ever held up a dozen eggs and wondered if they are really fresh there are ways to make those eggs reveal their secrets!

Fresh eggs have shells that are chalky and rough. If the shell is too smooth, it is not at its freshest!

If you get the eggs home and want to test them, fill a deep bowl with water and gently release an egg into it; a fresh egg will drift to the bottom quickly, as there is less air in the egg when it is fresh, and as the egg ages, more air is absorbed into the egg. Eggs that are fresh will lie on their side at the bottom of the bowl while eggs that are old will stand upright!

The freshest eggs will have yolks that stand high and firm, and the whites may even be a little cloudy (they are cloudiest right after being laid). Older eggs will be much more "loose" and the yolks will flatten out.
