Ingredients:
- 2 tablespoons olive oil
- 2 cups bread, cut into 1/2-inch cubes (day-old Italian or French)
- 4 organic tomatoes, seeded, cut into 1/2-inch cubes
- 1 tablespoon garlic, minced
- 1 teaspoon sugar
- to taste Salt & pepper
- 1⁄3 cup shredded Parmesan, divided
- 1⁄2 cup pizza sauce
Directions:
1. Heat oven to 350 degrees. Heat a heavy skillet over medium flame. Add oil and bread cubes; toss and cook until bread is lightly browned, 8-10 minutes.
2. Add tomatoes, garlic and sugar. Cook 3 minutes, stirring often. Season to taste with salt and pepper.
3. Spread tomato mixture in casserole. Sprinkle half the Parmesan evenly over the top. Drizzle with pizza sauce. Bake 25 minutes. Sprinkle on remaining parmesan; bake 5-10 minutes longer. Let stand 5 minutes at room temperature before serving.
