Ingredients:
4 large red, yellow or orange sweet peppers
2 cups milk
1 cup water
3/4 cup coarse ground yellow grits
3 Tablespoons butter
1/2 teaspoon salt
1/4 teaspoon chili pepper
1 1/4 cup shredded Italian cheese blend
2 eggs, beaten
Julienne-cut Sun-dried tomato or diced fresh for topping
If desired, add black beans, diced tomatoes or chopped sauteed onions to grits before baking for a little variety!
Instructions:
Preheat oven to 350 degrees.
Halve the peppers lengthwise and seed. In a large, heavy saucepan, bring milk and water to a boil. Add grits, and simmer, stirring occasionally until grits are done. Remove from heat and add the remaining ingredients and blend well. Spoon the grits into the pepper halves, filling to the brim, and set in a baking pan (greased or parchment). Sprinkle the top of each pepper with tomatoes, bake for 50 minutes.
