Mashed Cauliflower PDF Print E-mail

Ingredients:

1 large head cauliflower, cored and chopped

4 cloves fresh garlic

1 1/2 cups vegetable stock

2 tablespoons butter

1 cup sour cream

1 cup shredded Cheddar

salt & pepper to taste

 

Instructions:

1. Bring the cauliflower, garlic and the chicken stock to a simmer in a large saucepan over medium-high heat. Cook until the cauliflower is very tender, about 10 to 15 minutes.

2.Puree the cauliflower and garlic in a food processor. Add in the butter, sour cream & Cheddar. Season to taste with salt and pepper.
