Simple Cheddar Potato Soup PDF Print E-mail

Ingredients:

1 Medium Onion, Chopped

1 T. Oil

1 1/4 Lbs. Potatoes, pared & cut into 2 inch chunks

Vegetable Broth (13-14 Oz.)

1 1/2 Cup Milk

1 T. Mustard

6 oz. Shredded Cheddar

 

Directions:

Saute Onion until tender in large saucepan. Add potatoes & broth, simmering for 20 minutes. Allow to cool to safely handle. Pour into blender and blend until smooth. Pour into large pot, stir in milk and mustard and bring to boil. Turn off heat, stir in cheese until melted.
