Mud Pie PDF Print E-mail

Ingredients:

1 Cup finely chopped chocolate cookie crumbs (I like chocolate wafers, but you can use a wide variety of cookies for this)

1 Quart Coffee Ice Cream

1/2 cup Hershey's Chocolate Syrup (really, get the kind in the can. I don't know why this is, but it tastes better to me than the stuff in the plastic bottle).

Butter (for greasing)

 

Directions:

Butter your pie tin or plate

Sprinkle the crumbs in the bottom of the pie plate, reserving half for topping

Spread the softened ice cream over the crumbs, then sprinkle HALF the remaining crumbs over the ice cream

Put in freezer to freeze hard (at least 2 hours)

Take out of freezer, run tines of a fork over the top of the pie to make furrows

Pour chocolate syrup over the top (making sure to get it deeply into the "fork-furrows"), sprinkle on the rest of the crumbs

Freeze uncovered again until syrup is firm (then you can cover in freezer until ready to serve).
